Traditional Vinegar Maker Chosanjung, Releasing Two Products of Apple Vinegar and Mandarin Vinegar

Chosanjung Co., Ltd., a representative traditional vinegar company in Korea with a history of over 70 years since 1946, has launched two types of sweet and fragrant vinegar: Apple Vinegar and Mandarin Vinegar.

Apples and mandarins are concentrated 10 times more than usual. It can be utilized as salad dressings and sauces for dipping bread with their sweet and sour flavor and thick viscosity. It has been supplied MyeonginMyeongchon, a premium food store in Hyundai Department Store, Hansalim Consumer Cooperative, an organic and eco-friendly store where consumers become owners, and Dure Consumer Cooperative for product quality recognition. 

Peter Gilmore, who won the 2018 Australian Chef of the Year Award as the chef of Quay Restaurant and Benelong, both deemed as Australia’s best restaurant in 2018, tried the Apple and Mandarin Vinegar in his recipe and praised them.

Since their launch, they have been consistently adopted by restaurants, capturing the tastes of not only Asians but also Westerners.

For the Apple Vinegar, only 100% Korean apples are crushed to be juiced and boiled in a cauldron. They are further fermented with acetic acid and then concentrated again through evaporation of moisture in a jar for more than a year. The concentrated vinegar has a sugar content of 75 Brix and an acidity of ph 5 or more, making it a deliciously sweet and sour black apple vinegar. 

For the Mandarin Vinegar, only 100% Jeju mandarins are crushed to be juiced and boiled in a cauldron. They are further fermented and acetic acid and then concentrated again through evaporation of moisture in a jar for more than half a year. The concentrated vinegar has a sugar content of 50 Brix and an acidity of ph 5 or more, making it a deliciously sweet and sour yellow mandarin vinegar.

Each of the Apple and Mandarin Vinegar has become exquisite vinegar through natural fermentation for a long time with only 100% pure apples or mandarin without any additives. They can be used as healthy salad dressings, sauces for meat and seafood dishes their softer and richer flavors than the traditional vinegar.
